Recipe: Cardamom Blossoms

A recipe for foraged herbal tea, part of our feature, Herb Drying.

The delicate, smooth, floral flavors of chamomile and lavender flowers perfectly pair with aromatic orange blossom water, and are brightened by the sweetness of mint and the earthy, citrus notes of cardamom.

2 cups cold water (preferably filtered)
1 teaspoon dried mint
1 teaspoon dried lavender flowers
1 teaspoon dried chamomile flowers
1 teaspoon green cardamom pods, crushed (steep both seeds and pods)
1/2 teaspoon orange blossom water

Heat the cold water to a full boil. Place the mint, lavender flowers, chamomile flowers and crushed green cardamom pods and seeds into the infuser of a small teapot.

Pour the boiling water over the herbs and flowers and let steep for 7 minutes while covered. Remove the infuser; reserve herbs and flowers for a second steep. (Increase second steep time to 8 minutes.)

Add a splash of the orange blossom water and stir. Serve in two cups while still steaming.
