Properly situated on Dixon Street in the space that used to occupy the old Eva Dixon’s café, Six Barrel Soda Co. serves up a range of soda, coffee and small bites to Wellington locals.

The most unique part of the café lies in the making of their soda syrups, with all ingredients and spices hand-prepped and cut fresh for each batch. With seasonal syrups in the works (read: grapefruit and elderflower), they currently carry kola nut, lemon, cherry & pomegranate, raspberry & lemon, lime, vanilla cream and ginger as their staples.

The process takes about 24 hours while they let the flavors combine and intensify, after which the syrups are bottled and labeled by hand, making each one slightly unique. The bottles are currently sold for customers to take away or to make drinks on site in the café. Six Barrel syrups are stocked in a few Australian cities currently with plans to expand, but only in a capacity that will retain their small batch method. Looking to get your hands on a bottle?
