Recipe: Honey Ginger Coconut Popsicles

You should never feel bad about eating popsicles, but when you eat a popsicle made out of honey, ginger and coconut you will feel even better! Research has shown that these ingredients make all kinds of magical things happen, such as preventing illness, keeping you hydrated and keeping your body in good shape. Honey is antibacterial, ginger helps to regulate your stomach and coconut is a source of vitamins, minerals, fiber and electrolytes. All three are chock full of antioxidants and will keep you feeling tip-top and looking lovely. Get out your molds and make these now.

Recipe: Honey Ginger Coconut Popsicles

3 (14-ounce/415 milliliter) cans full-fat coconut milk
1 (4-inch/10-centimeter) piece fresh ginger, finely grated
1 cup (12 ounces/340 grams) local honey

Popsicle molds
Wooden popsicle sticks

In a heavy-bottomed medium-size saucepan, stir together the coconut milk, ginger and honey. Bring to a boil over medium-high heat, stirring occasionally, until the honey is completely dissolved. Reduce heat to low and simmer for 10 minutes to allow the ginger to infuse the mixture.

Strain the mixture through a fine-mesh sieve, preferably into a large liquid measuring cup or other vessel with a lip (for easier pouring). Allow the mixture to cool to room temperature, then divide it evenly among popsicle molds. Cover the molds, insert sticks and freeze until firm.

Yield depends on type of popsicle molds being used. If you don’t have professional molds and are using a homemade version, such as paper cups, be sure to cover the cups with foil after filling. Once covered, insert your popsicle sticks and freeze.

This recipe is vegetarian, gluten-free and dairy-free.
