Perfect Hard-Boiled Eggs

Follow these simple steps to avoid a chalky, sulfuric center and achieve a perfectly yellow, still-moist yolk. 

Method

1. Fill a pot with water and bring to a boil.

2. Once it’s boiling, turn off the heat and very gently add eggs with a slotted spoon.

3. Cover and let sit for 10 minutes for large eggs — less for smaller eggs.

4. Cool in a bowl of ice water, then peel, dip in sea salt and enjoy — preferably in a ceramic cat egg cup at breakfast.
