MAKES 12 GILDAS:

12 toothpicks
24 large green olives, pitted
12 anchovies
12 ½-inch slices of Spanish chorizo
12 pickled chili peppers
Extra-virgin olive oil
Flaky sea salt 


On a toothpick, skewer an olive, an anchovy, another olive, a piece of chorizo and a pickled chili. Repeat with the remaining ingredients. Arrange on a platter, drizzle with olive oil and sprinkle with salt.
