Shallot Tart with Anchovies and Olives
SERVES 12:
Canola oil (or similar)
15 to 20 shallots, depending on size, thinly sliced
½ cup (120ml) balsamic vinegar
8 cloves garlic, thinly sliced
4 bay leaves
Salt and pepper
2 sheets puff pastry
2 eggs, beaten
1 cups (400g) crème fraîche (use 50% fat if available)
Grated zest of 3 lemons
15 to 20 anchovy fillets
About 30 pitted black olives
Fresh oregano or sage
In a large pan over low heat, warm a splash of oil, add the shallots and stir. Once slightly browned, add the balsamic vinegar, garlic and bay leaves. Season well with salt and pepper and cook for about 30 minutes. Remove and discard the bay leaves and leave the compote to cool.
