CHARRED CAULIFLOWER ON SESAME BEANS
This is one of those dishes that looks like an absolute showstopper but requires hardly any effort at all, plus it’s almost all done in one pot, so there’s very little cleanup afterward! The tahini in the beans gives such a wonderful, nutty depth of flavor and when paired with charred cauliflower it is a match made in heaven!
(Serves 4)
INGREDIENTS
2 tablespoons olive oil
1 cauliflower
½ red onion, sliced into half-moons
Juice of ½ lemon
1 shallot, diced
4 garlic cloves, grated or finely chopped
2 (15-ounce / 400g) cans cannellini beans
½ cup (100ml) vegetable stock
3 tablespoons tahini
Salt
