Sweet potatoes might not be as malleable as regular potatoes but they are an accessible staple that is both nutrient-dense and flavorful. And like other winter vegetables, you don’t have to eat them right away—you can stock up and use them as needed. 

This comforting and hearty shepherd’s pie uses mashed sweet potato for the topping and lentils cooked with warming spices instead of meat. If you don’t have sweet potatoes on hand, you can use a winter squash mashed with regular potatoes, and for a vegan option, just swap out the butter, milk and cheese for the nondairy alternatives, and use the homemade Worcestershire sauce option.

It’s the perfect pie for meal planning, especially in the winter and the holiday season, when we’re gathering in a more intentional way. Make it in advance and eat it over a day (or two or three) by the slice, like cake, whenever you want.
